When we can cover something in chocolate and still know that it’s healthy, we’re a happy team! We’ve had kiwis in salads and cakes. But chocolate covered? Why not!?
1 cup dark chocolate, chopped
1/2 cup coconut oil, melted
1. Combine dark chocolate and coconut oil in a double boiler (or a big bowl in a pot of water under low heat). Let the chocolate liquify, and let it cool to room temperature.
2. Peel and slice kiwis into about 1 inch thick. Stick popsicle sticks and freeze for at least 1 hour.
3. Dip each Kiwi-pop into the chocolate mixture (chocolate will harden immediately). Freeze for at least another hour. Or until chocolate is fully set.
